All hail kale! This iron-rich, fibrous vegetable is amazing but can be labour intensive to eat. It's raw-some but sometimes I like it cooked just a bit. Lots of chewing = lots of time. To cut down on chomp time and spruce up these fab greens, I spooned homemade broccoli soup on top, diced a tomato and added some pre-made grilled peppers. I feel like a well fed Cabbage Patch Kid, but without the bloating lol. Filling and healthy! How do you spruce up your kale?
